Preheat oven to 375°F.
In a skillet, cook sausage until browned. Add onion and zucchini; cook until soft.
Stir in cooked wild rice, tomatoes, and seasonings.
Stuff each bell pepper half with the mixture.
Place in a baking dish with a little water at the bottom. Cover with foil and bake for 25 minutes.
Remove foil, sprinkle with cheese (if using), and bake for 5 more minutes.
Tip: Swap wild rice for quinoa or brown rice for extra fiber!
