Smoky Mountain Vegetable Soup

A nutritious comfort soup inspired by traditional Appalachian flavors.

Ingredients

  • 1 tbsp. olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 zucchini, diced
  • 1 can (15 oz.) no-salt-added
  • diced tomatoes
  • 4 cups low-sodium vegetable or
  • chicken broth
  • 1 can (15 oz.) white beans, rinsed
  • 1 tsp. smoked paprika
  • ½ tsp. thyme
  • ½ tsp. black pepper
  • 2 cups chopped kale or collard greens

Directions

  1. Heat olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant.

  2. Add carrots, celery, and zucchini. Cook for 5 minutes.

  3. Pour in tomatoes, broth, and beans. Stir in smoked paprika, thyme, and black pepper.

  4. Bring to a boil, then reduce to simmer for 20 minutes.

  5. Stir in greens and cook for another 5 minutes. Serve warm.
