Healthy Skillet Cornbread

Traditional, but with a lighter spin!

Ingredients

  • 1 cup cornmeal
  • ½ cup whole wheat flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 cup unsweetened almond milk (or skim milk)
  • 1 tbsp. apple cider vinegar
  • 2 tbsp. honey or pure maple syrup
  • 1 egg
  • 2 tbsp. olive oil (or melted coconut oil)

Directions

  1. Preheat oven to 400°F and place a greased cast-iron skillet inside to warm.

  2. In a small bowl, mix almond milk and apple cider vinegar; let sit for 5 minutes.

  3. In a large bowl, whisk cornmeal, whole wheat flour, baking soda, and salt.

  4. Stir in the milk mixture, honey, egg, and oil. Mix until just combined.

  5. Pour batter into the hot skillet and bake for 20-25 minutes, until golden brown.
