Appalachian-Style Chicken & Dumplings

A lower-fat, high-protein version of this Southern favorite.

Ingredients

• 1 lb. boneless, skinless chicken breast
• 4 cups low-sodium chicken broth
• 1 small onion, chopped
• 2 carrots, diced
• 2 celery stalks, diced
• ½ tsp. black pepper
• ½ tsp. thyme
• ½ tsp. garlic powder
• 1 cup whole wheat flour
• ½ tsp. baking powder
• ¼ tsp. salt
• ½ cup unsweetened almond milk (or skim milk)

Directions

  1. In a pot, bring chicken, broth, onion, carrots, and celery to a boil.
  2. Reduce heat and simmer for 15 minutes. Remove chicken, shred, and return to pot.
  3. In a bowl, mix flour, baking powder, andsalt. Stir in almond milk to form a dough.
  4. Drop small spoonfuls of dough into the pot. Cover and simmer for 10 minutes.
  5. Stir gently and serve warm.
